Yellow Curry

Ingredients

Coconut oil or vegetable oil

2 quarter chicken legs

1 large russet potato, cut into bite sized pieces

1 white onion, cut into bite sized pieces

Yellow Curry is a dish from Southern Thailand and gets its bright yellow color from the yellow peppers, roasted spices, and turmeric. It's a milder curry than the more popular red and green curries, but it still has a little spiciness without being overpowering. In this recipe, we’ll be making a familiar yellow curry dish that includes potatoes, carrots, onions, and chicken thighs.

Cooking Steps

Prepare the yellow curry: Add 1 tablespoon of coconut oil to a pan and heat over medium heat. Add the organic yellow curry paste and heat until fragrant, 30-45 seconds. Add the coconut milk, ½ cups of water, and the organic curry seasoning. Mix well for 2 minutes.

Cook the potatoes: Add the potato and organic herbs to the curry. Stir for 5-7 minutes.*

Cook the chicken and onions: Add the chicken and onions for 5-7 minutes or until fully cooked.

Serve over steamed rice.
* Add the organic dried red chilis during step 2 for extra spice. Be careful, these are very spicy
