Red Curry

Ingredients

½ cups fresh pineapple, sliced into bite size pieces

2 tbsp Sutharos Organic Thai Red Curry paste

1 tbsp coconut or cooking oil of choice

2/3 cup of coconut milk
-
½ cup fresh pineapple, sliced into bite size pieces

½ cup cherry or grape tomatoes

½ lbs of roasted duck

5 kaffir lime leaves
-
2 Thai basil stems (for the leaves)

Salt
-
Sugar

Steamed jasmine rice

(Optional) 3 Thai birds eye chilis, sliced in halves for additional spiciness

(Optional) 1 tbsp fish sauce
“Red Curry” or as we say in Thai "Kaeng Phet," is a typical Thai curry that is common in the central region of Thailand. Its delicious taste comes from the red chili peppers, galangal, and lemongrass, and it is known for its bright red color and spicy, aromatic flavor. Traditionally, the curry is simmered with vegetables, spices, coconut milk, and a protein such as chicken or tofu. In this recipe we will cook a simple red curry dish which uses bamboo shoots, red bell peppers, and shrimp.


Cooking Steps

Prepare the red curry: Add 1 tablespoon of coconut oil to a pan and heat over medium heat. Add the organic red curry paste and heat until fragrant, 30-45 seconds. Add the coconut milk, ½ cup of water, and the organic curry seasoning. Mix well for 2 minutes.*

Cook the vegetables: Add the tomatoes, pineapple, and organic herbs (kaffir lime leaves and basil leaves) to the curry. Salt and sugar to taste. Stir for 3-4 minutes.**

Heat up the duck: Add the duck and cook about 3-4 minutes to absorb the flavors.

Serve over steamed rice.
* Add 1 tbsp fish sauce in step 1 for additional flavor
** Add the organic dried red chilis (birds eye chilis) in step 2 for extra spice. Be careful, these are very spicy!
