Creamy Tom Yum Noodle Soup

Ingredients

  • Sutharos Creamy Tom Yum Soup Meal Kit - Comes with organic brown rice noodles, organic tom yum seasoning, organic coconut milk, organic chili paste, organic dried herbs, and organic dried red chili pepper

  • ¼ mushrooms, cut into quarters

  • ½ lbs of shrimp, shelled and deveined

  • ½ lbs of cuttlefish, cut into bite sized pieces 

  • Cilantro, loosely cut for garnish

 

Tom Yum translates to Tom “to boil” and Yum “hot and sour” which makes complete sense that the soup has all of these attributes. It is a toss up between Pad Thai and Tom Yum Soup on which is the most popular Thai dish but both are definitely delicious. The addition of organic brown rice noodles and organic coconut milk to the soup is one of Sutharos’ unique and special meal kits. This recipe will be using crispy tofu but as always, you can substitute with your favorite protein.

Cooking Steps

  1. Prepare the noodles: Soak the organic brown rice noodles in boiled water for 4-5 minutes or until the noodles are slightly soft. Drain and set aside in a bowl.

  2. Prepare the broth: Bring 2 cups of water to a boil in a medium sized pot. Add the organic tom yum seasoning, organic chili paste, and dried herbs to the water and stir for 2-3 minutes.*

  3. Prepare the protein and vegetables: Add the shrimp, cuttlefish, and mushrooms to the broth and cook for 2-3 minutes.

  4. Prepare the final dish: Pour the soup over the noodles and garnish with cilantro.

    * Add the organic dried red chilis during step 2 for extra spice. Be careful, these are very spicy!
