Massaman Curry is a Thai dish that has become one of the most popular curries with visitors to Thailand. It's flavors display a Muslim or Islamic influence by including spices like cardamom, cinnamon, cloves, star anise, cumin, bay leaves, nutmeg and mace, which are not commonly used in other Thai curries. In fact, the name massaman comes from the term musulman, which is an older word meaning "Muslim". Therefore, this dish was once also known as "Mussulman curry".
